Caviar

Beleaev Caviar & Gourmet offers a selection of exceptional caviars, each with its own character and grade. Whether you are new to caviar or a seasoned connoisseur, discover Beluga of the Caspian, Oscietra in its noble and golden expressions, our signature Imperial Gold of the Amur River basin, alongside Baeri, the rare Almaz Diamond and Wild Salmon XXL. Each tin is hand-graded from mature sturgeon, fully traceable to source.

Baeri

Baeri caviar at its purest, from the Siberian sturgeon Acipenser baerii. Medium charcoal pearls melt with a silky pop, releasing gentle sweetness and toasted-almond depth on a clean, oceanic finish. The most approachable of the great sturgeon caviars, perfect for first tastings and everyday indulgence.

Oscietra

Two expressions of Acipenser gueldenstaedtii, the most beloved of all sturgeon caviars. Royal Oscietra brings velvety brown-and-gold pearls with buttery depth, toasted hazelnut and a long, supple finish. Golden Oscietra is the same noble sturgeon in its rarest colour, hand-selected amber pearls, creamier and more nuanced.

Imperial Gold

Imperial Gold caviar, our signature. A rare hybrid of Huso dauricus and Acipenser schrenckii from the Amur River basin, with large amber-golden pearls, a firm satisfying snap, opulent buttery depth and impeccable balance. Favoured by Michelin-starred kitchens for moments that need to be unforgettable.

Beluga

The legend of caviar, in two grades. Beluga from Huso huso, the ancient Caspian sturgeon, offers extra-large platinum-grey pearls that melt with marine depth and buttery richness. Beluga XXL is its rarest selection: the biggest, oldest grains with the longest silken finish, the most prized caviar in the world.

Almaz Diamond

Almaz Diamond, the rarest jewel of our collection. Small luminous gold pearls with mother-of-pearl shimmer, from a rare albino hybrid of Huso huso and Acipenser ruthenus, the Sterlet Albino. A glassy snap dissolves into a long buttery finish, with hazelnut depth and elegant salinity.

Wild Salmon XXL

Wild Salmon XXL roe, ikura at its most generous. Large translucent orange pearls of wild King Salmon (Oncorhynchus tshawytscha) from the pristine waters of Canada, with a juicy pop, bright briny-sweet flavour and a clean citrus lift. Naturally rich in Omega-3, vibrant and unmistakably gourmet.
