Sobrasada is the cured, spreadable sausage of the Balearic kitchen: minced pork seasoned with paprika and aged until it turns soft, almost paste-like in texture. The flavour is paprika-rich and gently smoky, with a slow warmth from the spice and a deep savoury character from the long cure. Spread it like a thick paste rather than slicing it. It works in two directions. Sweet, with honey on warm sourdough or grilled bread. Savoury, folded through scrambled eggs, melted into a tomato sauce for pasta, or spooned over roasted vegetables to enrich the dish. A charcuterie board favourite alongside manchego, marcona almonds and quince paste. 300g, organic, from Casa Riera Ordeix in Catalonia, a charcuterie house operating since 1852.
