How to choose Beluga caviar

What is Beluga caviar?

Beluga caviar comes from Huso huso, the largest sturgeon species. It is often grouped with black caviar, although Beluga pearls are usually pale grey to platinum rather than black. Our collection includes two grades with delicate sweet-cream notes, clean marine depth and a soft, silken finish. Pearl size and selection distinguish the two grades. Both are produced in certified aquaculture in Belgium and China.

Beluga Reserve or Beluga XXL?

Beluga Reserve Caviar has large, firm 3.0-3.5 mm pearls and a balanced sweet-cream character. Beluga XXL Special Reserve is selected for extra-large 4.5-5.5 mm pearls and a longer, more silken finish. Choose Reserve for the classic grade, or XXL for the largest pearl selection.

What affects Beluga caviar price?

Beluga caviar price reflects the grade, pearl size, selection and tin size. Reserve and XXL come from the same Huso huso species, but XXL is selected for substantially larger pearls. When you buy Beluga caviar online in the UK, compare the grade and serving size as well as the price per tin.

How to serve Beluga caviar

Serve Beluga well chilled and taste the first spoonful on its own. For a classic service, warm our Beleaev blinis gently and add a small spoon of crème fraîche before the caviar. Use a mother-of-pearl spoon rather than metal so the flavour stays clean.

Portions, storage and delivery

Allow 10-15g per person for a tasting. For a starter, plan 30-50g per person. Keep the sealed tin refrigerated and follow the temperature and use-by guidance on its label.
