Description

Yeast-raised mini pancakes made in the UK from a simple recipe of eggs, milk and flour. Each pack holds 12 pieces, each about 2 inches across, which is the size canapé tradition asked for.

Warm them through, top with a teaspoon of crème fraîche, then a small spoon of caviar. Twelve blinis serves four guests at a tasting, two for a generous starter.

They also work beyond caviar: smoked salmon and dill, beetroot purée and goat curd, foie gras and fig jam, or a slick of butter and a curl of cured trout.

Soft, lightly buttery, gently savoury, made to carry topping rather than dominate.

Serving and Pairings

How to serve

Bring the blinis to room temperature, then warm gently in a low oven, in a dry pan, or under a grill for 30 seconds per side. Serve warm, never hot, caviar dislikes a hot base.

Assemble at the last minute. A small spoon of crème fraîche or unsalted butter goes on first, then 2 to 3g of caviar per blini. Hold the spoon lightly, do not press the pearls.

Classic toppings

Caviar with crème fraîche and chive. Smoked salmon with dill and lemon zest. Beetroot purée with goat curd. Foie gras pâté with fig jam. Pickled herring with red onion and dill.

For a party

One pack of 12 covers four guests at three blinis each, or six guests at two each as part of a wider canapé spread. For 12 guests at a drinks reception, plan on two to three packs.

Quantity: 12 mini blinis per pack, each approximately 2 inches (5cm) in diameter.

Ingredients: wheat flour, milk, egg, yeast, salt, vegetable oil. May contain traces of soya.

Serving

Best warmed gently before serving. They will hold for 24 hours in a sealed bag once warmed and cooled, and reheat from frozen in 60 seconds in a dry pan.

Freezing and thawing

If supplied frozen, thaw in the fridge overnight, or warm directly from frozen on low heat. Do not refreeze once thawed.

Storage

Keep refrigerated below 5°C, or freeze at -18°C and use within the date on pack. Reheat gently before serving. Once opened, consume within the date on pack.
