Beleaev Oscietra guide
Oscietra, Osetra and Ossetra are established names used for this caviar style. In this collection, both grades come from Acipenser gueldenstaedtii. Expect firm pearls, balanced salinity and a nutty, buttery character. Colour varies by grade, from brown and olive tones to gold and amber. The species name remains the reliable reference when comparing products.
Royal Oscietra has brown-to-golden pearls with buttery depth, toasted hazelnut and brioche notes. Golden Oscietra is selected for its amber colour and brings a creamier, more delicate expression. Choose Royal for classic depth, or Golden for a creamier profile and more pronounced amber colour.
Serve Oscietra well chilled and taste it on its own first. Warm our Beleaev blinis gently, add a small spoon of crème fraîche, and use a mother-of-pearl spoon.
Allow 10-15g per person for a tasting. For a starter, plan 30-50g per person. Choose the tin size by guest count and how prominently the caviar will be served.
