- 12 fresh oysters, shucked, on the half-shell
- 60g unsalted butter
- 1 small shallot, finely diced
- 200g baby spinach
- 2 tbsp Pernod
- 30ml double cream
- 30g panko breadcrumbs
- 30g Parmigiano Reggiano, grated
- 25g Royal Oscietra
- 1 tbsp finely chopped flat-leaf parsley
- Rock salt for plating
The Method
1. Melt butter in pan. Sweat shallot 3 min.
2. Add spinach. Wilt 2 min. Squeeze dry.
3. Add Pernod. Reduce 30 sec.
4. Stir in cream, breadcrumbs, parmesan. Cook 60 sec. Cool slightly.
5. Spoon mixture onto each oyster.
6. Place oysters on a tray of rock salt. Grill 4 min until golden.
7. Top each with 2g caviar. Scatter parsley. Serve immediately.
