  • 100g full-fat mayonnaise
  • 2 tbsp tomato ketchup

  • 1/4 tsp paprika
  • 1 small Little Gem lettuce, shredded
  • 1 small avocado, diced (optional)
  • 30g Royal Oscietra
  • 1 tbsp finely sliced chives
  • 1 lemon, cut into wedges

The Method

1. Make Marie Rose: mix mayo, ketchup, Worcestershire, lemon juice, Tabasco.

2. Toss prawns with the sauce, reserving 4 prawns for garnish.

3. Place shredded lettuce and avocado in 4 chilled glasses.

4. Spoon prawn mixture on top.

5. Top each with 8g caviar. Garnish with reserved prawn, dust of paprika, chives. Add lemon wedge.
