FoieGood is the ethical answer to traditional foie gras. No force feeding, traditional free range, cage free. The ducks live outdoors with space to roam, open water access and a one hundred per cent natural plant-based diet of at least seventy per cent cereals. These escalopes are portion-cut at 30g each, four to a pack, ready to slide straight from the freezer into a hot dry pan. Sear hard on each side until the surface caramelises and the centre softens, just as you would treat a classic foie gras slice. Finish with sea salt, cracked black pepper and a sharp counterpoint: pickled cherries, fig compote, a balsamic reduction or a spoon of caviar. The escalopes also work seared and folded into a salad of bitter leaves with toasted hazelnuts. A lighter nutritional profile than traditional foie gras: 48 per cent less fat, 40 per cent fewer calories and 67 per cent less saturated fat. Frozen pack of 4 × 30g escalopes (120g total).
