Yurrita longfin tuna, Bonito del Norte, caught in the Bay of Biscay during the summer months using traditional pole-and-line methods. MSC certified for sustainability. Only the prized belly cuts are selected. Each fillet is hand-cleaned, hand-sliced and packed in olive oil, preserving its delicate texture and full flavour. The Spanish kitchen reaches for Yurrita when bonito is the centre of the plate: ensalada de bonito with sweet onion and piquillo, salade nicoise with green beans and boiled egg, a slow-toasted bocadillo with tomato, or simply forked over warm white beans with parsley.
