Foraged from forest floors between Tuscany and the Périgord, picked young, cleaned and frozen at source so the flesh stays firm and the flavour stays concentrated. The taste is unmistakable: deep, savoury, faintly nutty, with the smell of damp leaves and warm bark. A handful is enough to anchor a whole dish. Stir into a risotto ai funghi porcini in the last few minutes of cooking. Build a simple pasta sauce with butter, garlic and a splash of cream. Finish a beef stew, fold through tagliatelle, lift a mushroom velouté, or pile onto bruschetta with parsley and a slick of good oil. 1kg frozen bag. Cook from frozen, no defrosting required.

Use Cases

Cook directly from frozen. Sear in a hot pan with a little fat, or add straight into a simmering risotto, sauce or stew. Once thawed, do not refreeze.
