Yurrita sources anchovies directly from the Cantabrian Sea, hand-selecting only the freshest, perfectly sized fish. Each anchovy is salted in traditional tins and cured for a minimum of 20 months to develop its rich, distinctive flavour. Hand-prepared by experts following time-honoured methods: long temperature-controlled maturation, careful washing for the right saltiness, patient hand-trimming for a smooth, soft fillet. The 270g tin is the dinner-party tin: an anchovy plate with capers, lemon and warm bread; classic pasta puttanesca with olives and tomato; a proper Caesar dressing whisked from raw yolk, anchovy and Parmigiano; or simply on warm sourdough with cold salted butter.
