The Ingredients

Serves 4

  • 320g Carnaroli rice
  • 250g mixed wild mushrooms (porcini, chanterelles)
  • 1 small onion, finely diced
  • 60g unsalted butter (30g cooking, 30g finishing)
  • 100ml dry white wine
  • 1.2 litres hot mushroom stock
  • 60g Parmigiano Reggiano, grated
  • 60g Royal Oscietra
  • 1 tbsp fresh thyme leaves
  • 1 tbsp finely sliced chives
  • Sea salt and white pepper

The Method

1. Brush mushrooms. Slice large ones.

2. Sauté in 30g butter over high heat for 4 min until golden. Add thyme. Reserve.

3. Sweat onion 6 min in another pan.

4. Add rice. Toast 90 sec. Add wine.

5. Add stock ladle by ladle for 17 min.

6. Stir in cooked mushrooms.

7. Off heat, mantecare with cold butter and parmesan.

8. Plate. Wait 60 sec. Top with 15g caviar per portion. Chives. Serve.

Tips

Brush mushrooms, don't wash.

Sauté on high heat.

Mushroom stock if available.

Cool before caviar.

With truffle: Add fresh black truffle on top.
