Fleur de Sel is the thin lace of crystals that forms on the surface of the salt pans on still, sunlit days. In Guérande, paludiers have raked it by hand from the same Atlantic-fed clay basins for over a thousand years, working the salt and the wind together with wooden tools. The result is a finishing salt with delicate, crunchy crystals, a clean mineral note and a faint sweetness. It dissolves slowly on the tongue, so the seasoning arrives in waves rather than all at once. This is salt for the table, not the pan. Scatter over sliced beef tomatoes with olive oil, finish a soft-boiled egg, crown a piece of warm focaccia, season a steak the moment it leaves the rest. It also belongs on butter caramels, dark chocolate and good salted butter on sourdough. 500g pack, sealed for the cellar shelf.

Use Cases
