Lobster vs King Crab: Key Differences & Buyer Guide
By Beleaev Family | Beleaev Caviar & Gourmet
Lobster tails and king-crab meat are different buying formats. The lobster pack includes shell and needs cooking; the king-crab product is sold as frozen extracted leg meat. A price per pack or per purchased gram does not establish the cost of an equal edible portion.
What the current listings confirm
| Product | Format | Catalogue price | Purchased-weight comparison |
|---|---|---|---|
| Canadian XL lobster tail | One raw frozen shell-on tail, 180–200g | £45.50 | £22.75–£25.28 per 100g including shell |
| King-crab long-leg pure meat | 227g frozen extracted meat | £97.95 | £43.15 per 100g purchased meat |

Choose by the work and presentation
A shell-on tail suits a cooked centrepiece and allows the shell to remain part of the presentation. Extracted king-crab meat reduces shell removal, but its frozen state still needs the label's preparation and thawing directions. Do not infer that every frozen crab product is raw or already cooked from its title alone.
For a paired cold starter, complete the lobster cooking first, cool it appropriately and keep raw-seafood equipment away from ready-to-eat ingredients. The recipe below uses 100g edible prepared meat from each product and one full 20g Beluga Reserve tin. Two tails are a shopping allowance rather than a promised yield.
Measured serving with caviar or roe
Serve four paired seafood plates, each with 25g prepared lobster, 25g prepared king crab and 5g Beluga divided equally between the two samples. Two shell-on tails are a planning purchase; weigh the cooked edible meat and use more if required to supply 100g.
- Yield: 4 comparison starters
- Seafood: 25g lobster and 25g king crab per plate
- Caviar: 2.5g on each seafood sample

Equipment
- Digital probe thermometer, scales and timer
- Pan or steamer suitable for the lobster tails
- Seafood scissors, board and two clean bowls
- Four chilled plates and non-metal caviar spoon
Prepare two comparable seafood portions
- Follow each frozen-product direction. Thaw or cook the lobster and prepare the king crab only as their current delivered labels require. Keep raw and ready-to-eat equipment separated where applicable.
- Check lobster doneness. Cook until the flesh is opaque and the safe core target required by the delivered instructions and applicable guidance is met. Remove the shell, then weigh the cooked edible meat.
- Measure both sides. Make four 25g lobster portions and four 25g king-crab portions. If the lobster yields less than 100g, prepare more lobster rather than reducing only one side.
- Add a common dressing. Melt 20g butter, take it off the heat and stir in 8ml lemon juice. Spoon the same measured amount over both seafood groups.
- Plate the pair. Put one portion of each seafood on every chilled plate, leaving a clear gap between them.
- Add Beluga last. Place 2.5g caviar on the lobster and 2.5g on the king crab on each plate. Finish both with an equal share of chives.
Do not compare unequal yields
The lobster purchase weight includes shell, while the king-crab product is sold as meat. The two-tail purchase is a planning allowance, not a promised yield. Use 100g of prepared meat from each side for the plate and manage any remainder under its own label.
Seafood corrections
- The lobster yield is short: keep the full 25g comparison size and prepare additional lobster rather than shrinking one side.
- The butter sets on the plate: use plates that are cool rather than ice-cold and add only a thin measured coating.
- The king crab releases water: drain and blot the exterior before weighing portions.
- The caviar warms: complete all hot preparation first and add it only when the seafood is ready to serve.
Allergens and safety boundary
Fish, crustaceans and milk are present. Verify the cooking state, allergens, thawing method and cross-contact statement on both seafood packs. Use suitable controls for raw lobster if supplied raw, and avoid cross-contamination with chilled ready-to-eat caviar. Serve promptly; no universal storage period is given for prepared seafood or opened caviar.
Questions before ordering
Is the bought pack the serving quantity?
No. Use the ingredient amounts in the serving plan and keep the unused product under its own label. A larger retail pack does not automatically change the number of guests or the portion on each plate.
Does an equal portion prove the best flavour?
No. Equal amounts let guests choose between the formats, but the guide does not report a blind tasting or a universal preference.
Can every opened ingredient share one storage period?
No. Read the exact product instructions and any use-by date for each ingredient. Keep ready-to-eat seafood away from raw-food equipment and serve assembled dishes promptly.
