Foie Gras Burger: Topping Choice and Safe Assembly

Choose a prepared foie gras topping or cook a raw escalope separately, while keeping the burger fully cooked and the bun crisp.

Pick the foie gras format

A slice of ready-to-eat foie gras gives a soft topping; a raw escalope needs separate cooking. A burger's heat is not a cooking method for raw liver. Read both the burger and foie gras labels before starting, and keep the prepared topping away from the raw patty.

Prepare a stable burger

Toast the bun and have the garnish ready before the meat finishes cooking. Choose a modest amount of sauce so the foie gras does not slide out or disappear into a greasy layer. A sharp pickle or bitter leaf can add contrast; there is no need to add several rich sauces at once.

Cook the burger throughout

Minced meat is different from an intact steak. The Food Standards Agency advises against rare or pink burgers at home: cook the centre thoroughly and check it with a clean thermometer. If using a raw foie gras escalope, cook and check that separately before placing it on the finished patty.

Assemble just before eating

Use clean utensils to place the burger on its toasted base. Add the chosen topping and serve promptly rather than leaving the assembled burger under a grill. For a prepared foie gras topping, a brief contact with the finished hot patty is an assembly step, not a reheating or raw-liver safety step. Follow labelled handling instructions for the remaining product.

Cooking and product checks

For raw liver, follow the Food Standards Agency guidance on thorough cooking: 70°C at the centre for two minutes, or an equivalent combination. Follow the supplied pack for preparation from frozen or thawed; surface browning alone is insufficient.

Compare the preparation formats on frozen goose foie gras slices and FoieGood duck escalopes. Confirm the current pack directions before cooking; a smaller escalope cannot inherit a larger portion’s timing.

Read the exact product label for allergens, storage and after-opening use. For general handling, see the FSA chilling and defrosting guidance. The Beleaev foie gras guide explains the wider range of formats.
