Duck Breast with Foie Gras: Choosing the Topping and Planning Service

Choose a prepared or separately cooked foie gras topping for duck breast, with clear handling and doneness boundaries.

Choose the topping before cooking the duck

A slice of ready-to-eat foie gras and a seared raw escalope give different dishes. Prepared foie gras can be served alongside the finished duck; raw foie gras must be cooked separately. Do not put raw liver onto resting duck and assume the residual heat will cook it.

Organise the components

Prepare vegetables and any fruit accompaniment first. Keep raw duck and raw liver away from the prepared topping, salad and bread. Use separate clean utensils for plating. Render and cook the duck using a complete method appropriate to its thickness and pack instructions, and allow time for resting before slicing.

Check poultry properly

Duck is poultry. Follow the Food Standards Agency's advice to cook poultry throughout and use a clean thermometer to check the centre. Surface colour and crisp skin do not establish that the middle is cooked. A raw foie gras escalope also needs its own doneness check, even when the duck is ready.

Plate with restraint

Slice the duck, add the chosen foie gras preparation and offer sauce beside the meat. A tart fruit accompaniment can provide contrast without another heavy layer of fat. Keep duck fat and foie gras rendering out of the final plate unless a separate recipe deliberately uses them. This is a component and service guide rather than a timed recipe for every duck breast size.

Cooking and product checks

For raw liver, follow the Food Standards Agency guidance on thorough cooking: 70°C at the centre for two minutes, or an equivalent combination. Follow the supplied pack for preparation from frozen or thawed; surface browning alone is insufficient.

Compare the preparation formats on frozen goose foie gras slices and FoieGood duck escalopes. Confirm the current pack directions before cooking; a smaller escalope cannot inherit a larger portion’s timing.

Read the exact product label for allergens, storage and after-opening use. For general handling, see the FSA chilling and defrosting guidance. The Beleaev foie gras guide explains the wider range of formats.
