Pan-Seared Foie Gras: Choosing Escalopes and Controlling the Heat

Choose raw foie gras escalopes for pan-searing, distinguish them from prepared blocs, and manage heat, handling and accompaniments.

Which foie gras belongs in the pan?

Pan-searing starts with raw escalopes intended for cooking. A prepared bloc or a jar of whole foie gras is a different product: it is intended for slicing and serving, and should not be substituted in the same pan method. Beleaev lists frozen goose slices and FoieGood duck escalopes; their portion sizes differ, so they cannot share a reliable universal cooking time.

Prepare the plate before cooking

Toast the bread, finish the fruit accompaniment and warm the serving plates first. Keep the escalopes in the state specified on the pack: some products are designed to cook from frozen. Use a clean board and separate utensils for the raw foie gras. Choose a heavy frying pan with enough space between the pieces, and have a spatula ready so that delicate slices do not need to be squeezed with tongs.

Control colour and doneness separately

Heat the pan, add the portions according to their pack instructions and turn carefully once the first surface has coloured. Reduce the heat if the outside darkens before the centre is cooked. Browning is a flavour step, not proof that liver is safe to eat. Check the centre with a clean food thermometer. Lift the finished pieces onto the prepared plates rather than pouring all the rendered fat over them.

Troubleshooting the texture

Crowding encourages pooled liquid and makes browning uneven. Very high heat can burn the surface while leaving the centre undercooked. A prepared bloc that melts into the pan cannot be rescued by treating it as a raw escalope. For a simpler cold starter, choose a ready-to-eat product and serve it with toast instead.

Cooking and product checks

For raw liver, follow the Food Standards Agency guidance on thorough cooking: 70°C at the centre for two minutes, or an equivalent combination. Follow the supplied pack for preparation from frozen or thawed; surface browning alone is insufficient.

Compare the preparation formats on frozen goose foie gras slices and FoieGood duck escalopes. Confirm the current pack directions before cooking; a smaller escalope cannot inherit a larger portion’s timing.

Read the exact product label for allergens, storage and after-opening use. For general handling, see the FSA chilling and defrosting guidance. The Beleaev foie gras guide explains the wider range of formats.
