Coppa is cured pork shoulder, the muscle that runs from the neck to the upper back of the pig. The mix of lean meat and fine seams of fat is what gives a good slice its silky texture and gentle marbling. The cure is salt, pepper and a quiet selection of spices, followed by a slow air-dry that runs for several months. The result is sweet on the front of the palate with a peppery finish. Let the slices come up to room temperature for around fifteen minutes before serving so the fat softens and the flavour opens. Lay them out on a wooden board with warm focaccia, fresh figs, shavings of Parmigiano and a glass of Lambrusco. It also makes a generous panini: coppa, mozzarella and a smear of fig jam between two pieces of grilled bread. 250g sliced pack, ready to serve.
