FoieGood is the ethical answer to traditional foie gras. The ducks grow slowly outdoors with open water access, never caged and never force-fed, on a one hundred per cent natural plant-based diet of at least seventy per cent cereals. The livers are turned into a smooth, spreadable pâté with a deep, intense flavour and a creamy mouthfeel. It carries the savoury richness of foie gras without the welfare questions that traditional production raises. Serve as you would any good liver parfait. On toasted sourdough with cornichons, on warm brioche with fig jam, or as the foundation of a charcuterie board next to a glass of dry sherry, sauternes or chilled riesling. Let the pâté warm for ten minutes outside the fridge before serving so the texture relaxes. 500g pack, frozen.
