King Crab vs White Crab Meat: Key Differences & Buyer Guide

By Beleaev Family | Beleaev Caviar & Gourmet

Choose white crab meat for loose flakes and king-crab leg meat when longer fibres suit the dish. Compare the product state, edible quantity and pack cost before deciding; neither format is universally better. Both can be served with a measured Oscietra topping once prepared according to their exact labels.

Current products and catalogue cost

Product Pack and state Catalogue price Cost per 100g purchased
White crab meat 454g chilled, ready to use on the current page £68.78 £15.15
King-crab long-leg pure meat 227g frozen meat; check the actual preparation state and label £97.95 £43.15

Catalogue prices and availability were checked on 12 October 2026. The unit costs use purchased net weight, not a guaranteed ready-to-serve yield. Discounts, delivery and any drain loss change the actual serving cost.

Choosing a format for the plate

The white-crab listing describes hand-picked body meat that can be lifted into loose flakes. The long-leg product is sold as extracted meat rather than a shell-on leg. Longer pieces suit a visible centrepiece; smaller flakes can be arranged on toast, in a salad or in a cold seafood spoon. Check for shell fragments in either product.

Buying both packs costs £166.73 before delivery or any discount. The comparison recipe below uses only 80g from each. Plan the unused portions before opening: pack size is not the amount required for eight samples.

Measured serving with caviar or roe

Build eight cold tasting spoons with the same Oscietra and dairy base: four use 20g white crab meat each and four use 20g king crab meat each. The equal format compares the two products without changing the caviar dose.

  • Yield: 8 tasting spoons for 4 people
  • Seafood: 20g per spoon
  • Caviar: 2.5g per spoon

Ingredients and purchase plan

Ingredient Amount used Pack to purchase
Oscietra Royal Caviar 20g 1 x 20g Sampling tin
White Crab Meat (454g) 80g ready-to-serve meat 1 x 454g pack
King Crab Long Leg Pure Meat, Frozen - Each (227g) 80g ready-to-serve meat 1 x 227g pack
Crème fraîche 40g 1 small tub
Lemon juice 4ml 1 lemon
Fresh chives 4g 1 small bunch

The recipe uses only part of both crab packs. Their exact delivered labels control preparation, thawing and storage of the remainder; the product titles alone do not establish whether the meat is ready to eat.

Equipment

  • Eight tasting spoons or small dishes
  • Digital scale, two bowls and two separate forks
  • Fine sieve, clean cloth and chilled tray
  • Non-metal caviar spoon

Assemble equal crab samples

  1. Prepare each crab separately. Bring both products to a safe ready-to-serve state under their own delivered directions. Drain them in separate sieves and keep their utensils apart.
  2. Standardise the pieces. Remove any shell fragments and separate large fibres gently. Weigh four 20g portions from each product without compressing the meat.
  3. Make one neutral base. Mix 40g crème fraîche with 4ml lemon juice and half the chives. Divide the complete finished mixture evenly between the eight spoons; it weighs more than the 40g crème fraîche alone.
  4. Place the crab. Add the four white-crab portions to one side of the tray and the four king-crab portions to the other.
  5. Finish with Oscietra. Weigh 2.5g caviar onto every spoon and add the remaining chives in equal pinches.
  6. Serve in pairs. Give each person one spoon of each crab and keep the left-right order consistent.

Comparison controls

Use the same serving temperature, dairy amount, lemon dose and caviar weight on both sides. The arrangement creates a direct comparison but does not state a sensory winner; preference requires the actual products to be tasted under these conditions.

Crab-spoon fixes

  • Liquid gathers in the spoon: allow more draining time and blot only the outside of the meat.
  • King-crab pieces overhang: separate them along natural fibres rather than cutting them into a paste.
  • White crab compacts: lift it with a fork and weigh loose portions.
  • The caviar slides: make a shallow hollow in the portioned dairy layer before adding it.

Allergens and chilled handling

Fish, crustaceans and milk are present. Check both crab labels for their full allergen declarations, preparation state and cross-contact wording. Keep the seafood, dairy and caviar within their individual chilled-storage directions and serve assembled spoons promptly. No opened-life or leftover period is stated for either crab pack.

Questions before ordering

Is the bought pack the serving quantity?

No. Use the ingredient amounts in the serving plan and keep the unused product under its own label. A larger retail pack does not automatically change the number of guests or the portion on each plate.

Does an equal portion prove the best flavour?

No. Equal amounts let guests choose between the formats, but the guide does not report a blind tasting or a universal preference.

Can every opened ingredient share one storage period?

No. Read the exact product instructions and any use-by date for each ingredient. Keep ready-to-eat seafood away from raw-food equipment and serve assembled dishes promptly.

For food handling, consult Food Standards Agency chilling guidance and cooking guidance. For caviar format and quantities, see the caviar pack-size guide.
