Oscietra Royal Caviar comes from Acipenser gueldenstaedtii. Raised in certified aquaculture facilities in China, France, Poland and Italy, the sturgeon matures for ten to twelve years. Its medium-large pearls measure 2.7 to 3.0 millimetres and range from polished brown to warm golden tones.
