British Wagyu Cuts: Steaks, Mince and Whole Pieces

Choose the preparation before the recipe. An individual steak, a whole joint, minced beef and skin-on tongue may all appear in a Wagyu range, but they require different quantities, equipment and cooking checks. The word Wagyu does not make them interchangeable.

A practical format map

Group Example format What it suits Important limit
Individual steaks Ribeye or striploin, ±250g or ±400g Pan or controlled grill cooking Check actual thickness, not just weight
Separate smaller steaks Fillet, 2 × ±150g; mini steaks, 4 × ±80g Individual plates or several small servings Piece count is not a cooked-yield guarantee
Flat steaks Bavette 240g; flat iron ±240g Steak meals sliced across the grain Match the prepared cut and trimming; do not substitute a whole blade blindly
Mince or formed burgers Mince ±500g; burgers 2 or 6 ×170g Measured mince dishes or burger meals Thorough centre cooking; whole-steak pink-centre advice does not apply
Thin-sliced beef Shabu-shabu/sukiyaki format, ±200g Small-batch hot-pot dishes Slice dimensions and folding affect the cooking check
Whole pieces Whole striploin, nominal 3kg Planned cutting or a larger shared cook Purchase weight is not trimmed or cooked yield
Offal Whole tongue, skin on, nominal 1.3kg A dedicated preparation and peeling method Not a quick steak-pan substitute

These are illustrative sizes for comparing preparations, not claims about current stock or certification. Check the actual selected and delivered pack before buying.

Start with the quantity you need

Any raw-weight example does not establish edible yield or permission to refreeze unused thawed meat. Resolve the supplied chilled/frozen state and label directions before ordering a whole piece, especially if listing wording is inconsistent.

Cut name and preparation are separate checks

AHDB's flat iron specification distinguishes prepared steaks from the feather muscle before its central gristle is removed. That is why a prepared flat iron and a whole oyster blade should not automatically use one cooking schedule.

The FSA also distinguishes intact beef from mince, rolled meat and offal. Choose a method for the exact format and follow the pack; a seared outside is not the universal safety endpoint for everything in the table.

Before buying a larger pack

Check how you will portion, cook, cool and store it, plus the full basket cost and delivery. If you only need one steak meal, a larger whole cut is not automatically better value for your occasion. Use the buying checklist to connect the cut choice to the actual purchase.
