How to Cook British Wagyu Sirloin or Striploin Steak

The product used here is labelled British Wagyu striploin steak. If you are searching for a sirloin cooking method, check that this is the cut and format in your pack rather than treating every product carrying a similar name as identical.

Ingredients for one steak plate

  • 1 striploin steak, nominal 250g
  • 150g cherry tomatoes, halved
  • 50g rocket, washed and dried
  • 1 tsp olive oil for the salad
  • 1 tsp red-wine vinegar
  • Up to 1 tsp neutral oil for the steak pan, if needed
  • Salt and pepper to taste

Check the edge as well as the centre

  1. Thaw frozen beef in the fridge following the label. Prepare the tomato and rocket salad, dressing it with the measured olive oil and vinegar shortly before serving.
  2. Inspect the steak's actual thickness and fat edge. Pat the surfaces dry and use a pan that allows full contact without crowding.
  3. If there is a distinct fat edge, hold that edge against the pan carefully with tongs before searing the broad faces. Do not let rendered fat accumulate and smoke uncontrollably.
  4. Sear both broad sides and every remaining outer edge. Reduce the heat if the surface browns before the centre is ready; weight alone cannot set the finishing time.
  5. Check the endpoint required for your product, using a clean thermometer as appropriate. Rest briefly on a clean plate and slice across the grain with a clean knife.
  6. Serve with the salad and season to taste. Add a separate starch side if you want a larger meal.

For intact beef, the FSA distinguishes a thoroughly seared exterior from the centre's preferred doneness. Follow the product label and do not transfer that advice to minced, rolled or otherwise altered meat.

Three useful checks

The fat edge remains pale: it may not have had direct pan contact; expose it deliberately rather than extending the whole cook without a reason. The steak curls: check its contact with the pan and adjust gently with tongs, avoiding heavy pressing that squeezes the meat. Slices feel long and chewy: identify the fibres and cut more thinly across them.

This method does not establish a specific farm, feed regime, grade or award. Those are product-evidence questions, separate from pan technique. For the full ordering check, use the buying guide, and follow FSA storage advice for cooked leftovers.
