Japanese A5 or British Wagyu?

Japanese A5 ribeye and sirloin offer BMS 10-12 marbling, a soft texture and a rich finish. Our British Wagyu Denver is BMS 6-7, with more bite and a deeper beef character.

What do A5 and BMS mean?

A5 is the highest grade in the Japanese system. BMS measures visible marbling within the meat. A higher BMS number indicates more intramuscular fat, but the cut still shapes the final texture. Read our Wagyu guide for more on origins, grades and cuts.

Choose ribeye, sirloin or Denver

Choose ribeye for a small, highly marbled steak and brief high-heat cooking. The fresh sirloin is a larger cut for roasting and carving. Denver suits grilling when you want more structure.
