Foie Gras Risotto: Choosing the Format and Finishing the Rice

Finish risotto with a suitable prepared foie gras product, control richness and distinguish the method from cooking raw liver.

Use the correct preparation state

For a finishing garnish, choose ready-to-eat foie gras and follow its handling instructions. A raw lobe or escalope needs a separate cooking process. Adding raw liver to rice off the heat does not reliably cook it, however hot the risotto feels.

Cook the risotto before adding the topping

Use a complete risotto recipe suited to your rice and stock. Keep the stock hot as directed, stir and adjust the liquid so the grains cook evenly. Check the seasoning towards the end, especially if the stock is already salty. The foie gras should not be used to compensate for undercooked rice or an overly reduced base.

Control the final richness

Finish the rice so it spreads gently on the plate rather than standing as a stiff mound. Add prepared foie gras as a separate small garnish or follow a recipe designed for incorporating that exact product. Reduce other rich finishing ingredients where appropriate; a large addition of butter, cheese and foie gras together can obscure the rice.

Serve and handle leftovers carefully

Plate immediately and keep unused foie gras under its labelled storage conditions. Risotto needs its own rice-specific cooling and storage precautions; do not leave it standing warm for later service. The Food Standards Agency's rice guidance explains prompt cooling and refrigerated storage. This guide does not assign a new shelf life to either the rice or the opened foie gras.

Choose a prepared product

For a ready-to-eat sliced presentation, see Rougie Whole Duck Foie Gras 180g; for a smooth bloc, see Rougie Duck Foie Gras Bloc 75g. These are named alternatives, not a claim that every parfait, mousse, torchon or ballotine has the same composition.

Read the exact product label for allergens, storage and after-opening use. For general handling, see the FSA chilling and defrosting guidance. The Beleaev foie gras guide explains the wider range of formats.
