British Wagyu BBQ Planner: Match the Cut to Direct and Indirect Heat
Start a barbecue plan with the cut's shape and preparation, not a single minutes-per-side rule. A steak can be seared directly, a whole joint needs room for gentler finishing, and a burger made from mince needs thorough cooking. The word Wagyu changes none of those safety distinctions.
Choose the cooking path
| Format | Initial heat | Finishing check |
|---|---|---|
| Intact ribeye steak | Direct sear on all exterior surfaces | Thickness and pack instructions; move to indirect heat if needed |
| Whole picanha, tri-tip or tomahawk | Controlled exterior browning | Indirect zone, thickest-meat probe, bone or fat avoided |
| Minced burger | Direct sear | Thoroughly cooked centre under FSA guidance |
| Small strips | Uncrowded batches | Follow preparation-specific directions; do not assume intact-steak rule |
Weber explains direct and indirect heat. Clean the grease area and reserve a cooler zone so you can move food away from flare-ups.
Check the exact pack
Use the exact received pack and its label to plan weight, storage and cooking. Sides, seasoning and equipment are separate; raw weight is not a guaranteed cooked yield.
Before lighting the grill
- Check the received label, including whether the piece is frozen and whether it is intact, rolled, minced or otherwise altered. Thaw frozen beef fully in the fridge under label directions.
- Set a direct zone and an indirect zone. Have a clean thermometer and clean plate ready. Note the thickest part of each piece.
- Prepare food in order of handling risk: keep ready-to-eat salad away from raw beef and use separate utensils.
- Cook each format by its own requirement. Sear the whole exterior of an intact steak; thoroughly cook burgers and minced dishes. Probe thicker joints away from bone or large fat seams.
- Move food away from flames promptly, rest safely and serve. Record actual cut thickness and readings if testing a repeatable recipe.
FSA cooking advice gives the intact-beef pink-centre distinction and thorough-cooking requirements for mince and other altered meat. FSA chilling advice covers fridge thawing. Feed, farm and awards require separate evidence; this planner does not claim them.
