The Ingredients

Serves 2

  • 200g flat rice noodles
  • 200g fresh white crab meat
  • 2 large eggs, beaten
  • 4 spring onions, sliced
  • 100g beansprouts
  • 4 tbsp tamarind paste
  • 3 tbsp fish sauce
  • 2 tbsp palm sugar (or brown sugar)
  • 2 tbsp neutral oil
  • 2 garlic cloves, sliced
  • 30g roasted peanuts, crushed
  • 1 lime, cut into wedges
  • 1 small handful coriander
  • 1 fresh red chilli, sliced

The Method

1. Soak rice noodles in hot water 8 min until softened. Drain.

2. Mix tamarind, fish sauce, sugar in small bowl.

3. Heat oil in wok. Add garlic. Cook 30 sec.

4. Push to side. Add eggs. Scramble briefly.

5. Add noodles, sauce, spring onion whites. Toss 90 sec.

6. Add beansprouts. Toss 30 sec.

7. Off heat, fold in crab gently.

8. Plate. Top with peanuts, coriander, chilli, spring onion greens. Add lime wedges.

Tips

Crab in at the end (don't cook).

Tamarind not optional.

Wok very hot.

Eat immediately.
