Kobe Beef vs Tajima Beef: What Connects Them?

Tajima Beef and Kobe Beef are closely connected, but they are not the same label. Tajima identifies the cattle lineage at the centre of the Kobe programme. Tajima is the cattle lineage referenced by the official Kobe programme. A Tajima claim explains an important part of provenance, but it does not on its own prove the meat is certified Kobe Beef. The named designation requires a broader chain of conditions.

How does Tajima Beef become Kobe Beef?

The Kobe designation is geographically specific. Japan’s agricultural ministry lists Kobe Beef as a geographical indication with its production area in Hyogo. A listing that mentions Tajima but cannot explain the Hyogo and certification chain is incomplete for a Kobe claim.

What grades does certified Kobe Beef need?

The official criteria require yield grade A or B, meat quality grade 4 or 5, and BMS 6 or above, alongside the other programme requirements. This shows why a grade by itself cannot replace provenance; Kobe is a combined standard.
