How to Cook British Wagyu Flat Iron Steak

Use a prepared flat iron steak for this pan method. A whole blade piece with a substantial central seam is a different preparation, so check the cut before assuming that a quick steak cook will suit it.

AHDB's flat iron specification describes removing the central gristle from the feather muscle before preparing flat iron steaks. That explains the cut distinction; it does not certify how an individual pack was trimmed.

One-steak meal plan

  • 1 British Wagyu flat iron steak, approximately 240g
  • 200g potatoes, cut into small pieces
  • 100g green vegetables
  • 1 tsp neutral oil
  • 1 tsp Dijon mustard, optional, for serving
  • Salt and pepper to taste

Inspect, sear and slice

  1. Read the pack and thaw fully in the fridge if frozen. If the cut or trimming looks inconsistent with the product description, clarify it with the seller before choosing the cooking method.
  2. Prepare the potatoes and vegetables first. Look at the grain in the steak and remember its direction for slicing later.
  3. Pat the steak dry and use a pan that holds it flat. Apply the measured oil sparingly if needed.
  4. Sear both broad sides and every outside edge. Adjust the heat to the actual thickness, reducing it if the outside darkens before the centre is ready.
  5. Follow the product's cooking requirement, checking with a clean thermometer where appropriate. Rest the cooked steak briefly on a clean plate.
  6. Slice thinly across the visible fibres on a clean board and serve with the sides and optional mustard.

The FSA's intact-steak distinction permits a pink centre when outside surfaces are thoroughly seared. It does not apply to minced, rolled or otherwise altered beef.

What a difficult bite can tell you

Long strands: reassess slice direction and thickness. A tough central band: inspect the preparation; more pan time is not a universal remedy for unremoved connective tissue. Dry lean sections: reduce unnecessary extra cooking next time while still meeting the appropriate safety requirement.

The nominal weight cannot supply a reliable minutes-per-side schedule. Record the actual thickness and result if repeating the dish. Optional mustard contains mustard allergen; check all additions. For delivery and handling questions, use the buying checklist and FSA storage guidance.
