The Ingredients

Serves 4

  • 400g sashimi-grade salmon fillet, skin off
  • 1 small shallot, finely diced
  • 2 tsp small capers, drained
  • 1 tbsp finely chopped fresh dill
  • 1 tbsp finely chopped chives
  • 1 tbsp lemon juice plus zest
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp Dijon mustard
  • 30g Royal Oscietra
  • Sea salt and black pepper

The Method

1. Dice salmon into 5-6mm cubes.

2. Combine with shallot, capers, dill, half the chives, lemon zest, olive oil, mustard. Season.
