Quiche Lorraine with caviar topping

The Ingredients

Serves 8

For pastry:

  • 250g plain flour
  • 125g cold unsalted butter, cubed
  • 1 large egg yolk
  • 30ml cold water
  • 1/2 tsp salt

For filling:

  • 200g smoked bacon lardons
  • 4 large eggs
  • 200ml double cream
  • 100ml whole milk
  • A pinch of nutmeg
  • 60g Royal Oscietra
  • 100g full-fat crème fraîche
  • 1 tbsp finely sliced chives
  • Sea salt and black pepper

The Method

1. Make pastry: rub butter into flour, add yolk and water, knead briefly. Rest 30 min.

2. Roll out and line a 24cm tart tin. Blind-bake at 180C for 15 min.

3. Cook lardons in dry pan until golden. Drain. Scatter in pastry case.

4. Whisk eggs, cream, milk, nutmeg, salt, pepper. Pour over lardons.

5. Bake at 180C for 30 min until just set.

6. Cool 15 min. Slice into 8 wedges. Top each with a small dollop of crème fraîche and 8g caviar. Scatter chives. Serve warm.
