  • 180g blackcurrant purée, thawed
  • 60g caster sugar
  • 30ml water
  • 1 tsp lemon juice
  • 750ml bottle dry sparkling wine, well chilled

  1. Warm the purée, sugar and water just until the sugar dissolves. Cool, stir in lemon and chill.
  2. Place two tablespoons of blackcurrant base in each of six chilled flutes.
  3. Add a small splash of sparkling wine and stir gently to loosen the fruit.
  4. Top slowly with the remaining wine and serve immediately.
