  • 180g pudding rice
  • 700ml whole milk or oat drink
  • 80g caster sugar
  • 5 green cardamom pods, lightly crushed
  • 1 strip lime peel
  • 1 pinch fine sea salt
  • 1 tbsp lime juice

Method

  1. Put rice, milk, sugar, cardamom, lime peel and salt in a heavy saucepan.
  2. Bring to a gentle simmer and cook for 25 minutes, stirring often, until the rice is nearly tender.
  3. Stir in the coconut purée and simmer for another eight to ten minutes until creamy.
  4. Remove cardamom and peel, then add lime juice to taste. Serve warm or cool.
