Use Purée Chestnut & Vanilla, Frozen, Boiron (1kg) to make this recipe. Chestnut vanilla purée turns Mont Blanc into a practical layered dessert: pipe it with mascarpone cream and broken meringue for contrast. The purée already brings chestnut body and vanilla aroma, so the filling needs only a little cream and a pinch of salt.
Chestnut purée is naturally dense, which gives the verrines structure without gelatine. Mascarpone softens the earthy chestnut flavour, while meringue adds the crisp texture that a smooth purée cannot provide on its own.
Keep the soft layers covered in the fridge for up to 24 hours. Add meringue only before serving so it stays crisp.
