  • 160ml water
  • 140g caster sugar
  • 35g liquid glucose
  • 20ml lime juice, plus more to taste
  • 1 pinch fine sea salt

  2. Whisk the cold syrup into the kiwi purée. Add half the lime juice, taste, then add more if needed.
  3. Chill for two hours and churn until softly frozen.
  4. Transfer to a covered container and freeze for four hours. Soften briefly before scooping.
