Japanese Wagyu Doneness and Temperature Guide

Quick answer: there is no single “Wagyu temperature” that answers every cooking question. Doneness describes how you want the meat to eat; safety depends on the cut, handling and cooking process. An intact beef steak can remain pink after its exterior is properly cooked. Minced, rolled or mechanically altered meat needs thorough cooking. A5 grading does not change that distinction.

A single 200g steak, two 100g pieces and 200g of thin slices do not heat in the same way. Weight helps you plan portions. Thickness, shape and preparation determine the cooking approach.

When may beef remain pink inside?

The Food Standards Agency's consumer cooking guidance distinguishes intact whole cuts from meat with contamination potentially distributed inside. For an intact beef steak or joint, properly cook the entire outside, including the edges and ends. The middle may then remain pink according to preference.

Do not extend this to burgers, mince, rolled joints, kebabs, offal or mechanically tenderised meat. If a pack requires thorough cooking, follow it. If you cannot establish whether the meat is intact, choose thorough cooking rather than applying an internet steak chart. A photograph of marbling cannot answer that question.

Which temperature-and-time combinations does the FSA give?

For thorough cooking, temperature and holding time work together. The FSA lists the following alternatives. They describe the temperature reached in the food's centre and the time held there, not the pan, oven or water-bath setting.

Reaching 60°C briefly is not the same process as holding the centre there for 45 minutes. Do not read the table as a ready-made sous-vide recipe: the centre needs time to reach the set temperature, and thickness, starting state and equipment matter. For everyday thorough cooking, the higher-temperature, shorter-hold options are usually easier to verify accurately.

Why not give one temperature for “perfect medium-rare”?

Doneness terms are culinary descriptions, not a universal safety certificate. Guides use different boundaries, and diners differ in the texture they enjoy. A low target taken from one steak recipe should not be applied to every Wagyu product or every person.

Decide first whether your product and circumstances permit a pink finish. Then choose a method suited to the actual thickness and use a thermometer to make it repeatable. If you require thorough cooking, use a suitable temperature-and-time combination instead of stopping at a colour description. The A5 grade assesses carcass characteristics, not food-safety treatment or readiness to eat raw.

How do you take a useful thermometer reading?

  1. Read your thermometer instructions. Know where its sensing area is and how much of the probe must enter the food.
  2. Cook the outside first. When assessing an intact steak, do not repeatedly push raw surface contamination into the middle.
  3. Use a clean probe. Insert from the side into the centre where practical. Avoid the pan, bone and large fat pockets, which can give misleading readings.
  4. Check the thickest area. For an uneven joint, test more than one position and pay attention to the lowest valid centre reading.
  5. Check the time as well. A momentary reading does not establish that a required holding period has elapsed.
  6. Clean between uses. Keep raw-food utensils separate from cooked-food equipment, following FSA hygiene guidance.

A probe that cannot sit fully within a very thin slice may read the pan or surrounding air instead. In that situation, use a suitable thin-food probe where available and cook the slices through; do not pretend an unreliable number proves safety.

Does resting change the result?

Heat can continue moving towards the centre after meat leaves the pan or oven. The amount varies with the piece and cooking method; there is no dependable universal adjustment to subtract from your target.

Rest a small steak briefly on a clean warm plate before slicing, and allow a whole joint a longer pause for carving. Do not rely on an assumed rise during resting to complete a required safety treatment. Nor should resting become a long wait on the worktop while you prepare the sides.

What should you check before the next cook?

Choose the cut and serving format using the UK Wagyu buying guide. Prepare the pan, sides and clean serving equipment before taking the meat out. For frozen products, follow FSA fridge-defrosting guidance, use within 24 hours of complete thawing or sooner if the pack requires it, and do not refreeze thawed raw meat.

For delivery, the gourmet policy states 1–3 working days for Monday-morning to Thursday-morning orders, depending on category.
