Grilled meat strips on wire rack

How to Prepare British Wagyu Beef Tongue with Skin On

The listing is one frozen whole beef tongue with skin on, nominally 1.3kg raw. Tongue is offal, so it is not covered by the intact-steak pink-centre exception. Skin and trim reduce edible yield; do not translate the pack weight into a fixed number of plates.

Choose the right pack and equipment

The selected product is one skin-on whole tongue. Aromatics, broth and sides are separate.

  • 1 whole tongue, nominal 1.3kg raw
  • 1 onion and 1 carrot, roughly chopped
  • Water or unsalted stock sufficient to cover in a suitable pot
  • Clean food thermometer, tongs and a board for cooked meat

Thorough-cook preparation

  1. Follow the received label and thaw frozen tongue fully in the fridge under FSA guidance. Inspect the skin and any producer instructions before preparation.
  2. Place in a pot with onion, carrot and liquid. Bring to a controlled simmer; keep the tongue submerged and replenish hot liquid if needed.
  3. Cook thoroughly according to the pack and FSA offal guidance. Probe the thickest part with a clean thermometer and verify the required time/temperature. Tender texture alone is not a safety measurement.
  4. Transfer to a clean board. Remove the skin when it is cool enough to handle safely, then trim and slice. The edible amount will be less than the raw pack weight; weigh the prepared meat if portions matter.
  5. Serve promptly or cool and refrigerate leftovers under FSA directions. Do not use raw-meat utensils on the cooked tongue.

Why there is no fixed simmer time

A nominal 1.3kg tongue can vary in thickness, starting temperature and skin condition. Pot size and simmer strength also change the time needed. Keep it submerged, use the producer's directions where supplied, and check the thickest part with a clean thermometer rather than treating tenderness or a clock as the only proof of thorough cooking. The FSA cooking guidance gives suitable core time-and-temperature combinations for thorough cooking.

Plan for the skin and leftovers

The skin is not the serving portion. Allow time to remove it safely after cooking, and keep a clean board and knife ready so the cooked meat does not touch raw-meat equipment. Because the pack is weighed before cooking and trimming, decide the number of diners from the prepared amount, not an assumed yield. Chill any leftovers promptly in shallow containers and follow the label and FSA chilling advice. Reheat only once until steaming hot throughout.
