British Wagyu Sirloin vs Fillet: Cut, Pack and Portion

Compare British Wagyu sirloin and fillet by both cut and format. The examples below use 250g or 400g striploin steaks and two 150g fillets. A pack comparison is not automatically an equal-weight cut comparison.

What do the names mean here?

Striploin is commonly sold as sirloin in the UK. Fillet means tenderloin. They are different muscles, so the right comparison is how each fits the meal, rather than trying to make them the same cut.

Fillet is a useful choice when you prefer a tenderloin steak and two smaller individual portions. A striploin can suit a larger individual plate or a steak sliced for sharing. Those are format decisions, not results from a controlled taste test of these products.

Decision Striploin / sirloin Fillet
Example format Approximately 250g or 400g. Two steaks of approximately 150g each.
Nominal total 250g or 400g per selected option. 300g per pack.
Two-person example Share 400g for 200g raw each, or buy two 250g options for 250g each. One 150g raw steak each, with sides appropriate to the menu.
Physical check Inspect thickness and any outer fat edge. Inspect the thickness of each separate portion.
What remains unknown Actual cooked yield and individual preference. Actual cooked yield and individual preference.

How do the example formats compare?

In the two-fillet example, each 150g steak makes about 300g total; it does not mean two 300g steaks. Likewise, a single 400g striploin shared by two diners is not a two-steak pack.

How should you compare value?

Divide the current pack price by the actual kilograms supplied, then compare the full meal. A lower pack price can reflect less meat. Include any trimming and uneaten outer fat if you later calculate usable cost, but do not invent a fixed waste percentage.

For two people, two 150g fillets allocate 150g raw beef each; a shared 400g striploin allocates 200g each. Decide which portion fits the sides and other courses before comparing total spend.

Will both cook on the same timer?

Not necessarily. Similar raw weights can have different thicknesses and shapes. Keep the surface dry, avoid crowding the pan and use an appropriate method for each piece. Where an outer fat edge is present, it needs attention along with the broad surfaces.

The Food Standards Agency's guidance distinguishes intact whole cuts from minced or otherwise altered meat. Follow the pack's preparation instructions; marbling is not a safety guarantee.

Which should you buy?

Choose two smaller fillet portions when they fit the meal. Choose a striploin option when its larger portion or sharing format suits you. If your question is which one tastes better, a fair answer needs an actual comparison cooked under comparable conditions. Neither a product photograph nor a breed label establishes a universal winner.
