Wagyu marbling, external fat trimmings and liquid left in the pan are not the same thing. Keep them separate when planning portions or judging cooking loss. A steak's reduction in weight includes more than rendered fat, so there is no honest universal percentage to subtract from every A5 pack.

Do not try to remove the fine marbling running through the meat. It is part of the cut's structure. A loose external edge or thick seam is a separate preparation decision: trim only what your recipe and the actual piece require, using a clean board and keeping the meat chilled.
A neatly portioned steak may need little preparation, while a whole piece gives you more decisions to make. The product format matters more than a rule that every Wagyu cut must be trimmed by the same amount.
Choose a format you can portion and cook confidently. The active catalogue includes steaks and thin chuck slices; they are not interchangeable simply because they share an A5 grade.
