Œufs en Cocotte with Caviar: Four Ramekins from One Tin

Œufs en Cocotte with Caviar: Four Ramekins from One Tin

By Beleaev Family | Beleaev Caviar & Gourmet

Bake four individual eggs in a water bath, then finish each ramekin with 5g of Imperial Gold Special Reserve after it leaves the oven. One 20g tin covers the four portions exactly, while toast soldiers provide a base that can be prepared before the caviar is opened.

  • Yield: 4 individual ramekins
  • Serving plan: 1 ramekin and 3 toast soldiers per person
  • Caviar allocation: 5g per ramekin

Ingredients and purchase quantities

Ingredient Amount used Pack to buy
Imperial Gold Special Reserve 20g 1 x 20g Sampling tin
Crème Fraiche, Fresh, 170g 40g 1 x 170g pot
Large eggs 4 1 box
Double cream 60ml 1 small pot
Unsalted butter 10g for the ramekins 1 pack
Sourdough bread 3 medium slices 1 loaf
Fresh chives 4g, finely cut 1 small bunch
Fine salt and white pepper A measured pinch of each From the cupboard

The complete caviar tin is used. The recipe takes 40g from the crème fraîche pot; keep the remainder under the instructions on its current label.

Equipment

  • 4 ovenproof ramekins of roughly 100ml capacity
  • Deep roasting tin and kettle
  • Small bowl, teaspoon and digital scale
  • Bread knife, baking tray and toaster or grill
  • Oven gloves, non-metal caviar spoon and four small plates

Water-bath method

  1. Set up the oven. Heat it to 180°C, or 160°C fan. Butter the four ramekins and arrange them in the roasting tin. Boil enough water to reach halfway up their sides.
  2. Build the ramekins. Put 10g crème fraîche and 15ml double cream into each dish. Crack one egg over the dairy, keeping the yolk whole. Add only a small pinch of salt and pepper.
  3. Add the water safely. Place the roasting tin on the oven shelf before pouring the hot water around the ramekins. Keep water out of the eggs.
  4. Bake by visual cue. Begin checking after 8 minutes. Remove each ramekin when the egg white is set throughout and the yolk has reached the doneness you want. The exact point will vary with the dish, egg temperature and oven.
  5. Prepare the soldiers. While the eggs bake, toast the bread. Cut each slice into four narrow fingers and place three beside every ramekin.
  6. Finish away from the oven. Lift the dishes out of the water bath and place them on dry plates. Wait until vigorous surface heat has settled, then spoon 5g caviar onto each egg and add a few chives.

How to keep the yolk and white in balance

A wide, shallow ramekin cooks differently from a narrow cup, so the movement of the egg matters more than a single promised minute count. Check all four, and remove an individual portion early if its white has set before the others. Do not return a ramekin to the water bath after its caviar has been added.

Fixes for common cocotte problems

  • The white is still transparent: return that ramekin to the water bath before topping it, then check in short intervals.
  • The yolk firms too quickly: begin checking the next batch earlier and reduce the oven heat if necessary, keeping the initial hot-water-bath setup consistent.
  • Water splashes into a dish: remove the affected ramekin before serving; next time pour from the kettle only after the roasting tin is on the shelf.
  • The toast cools first: cut the bread before baking the eggs, but toast it during the final oven checks.

Allergens and storage boundary

This dish contains fish, milk, egg and wheat, including gluten. Check the current labels for the exact caviar, dairy and bread, including any cross-contact statements. Serve the eggs promptly after cooking and decide yolk doneness for the people being served. Keep the sealed caviar and crème fraîche at the temperatures stated on their packs, and follow their exact opened-storage instructions. This recipe does not establish a safe holding time for cooked egg ramekins or a leftover life for opened caviar.

Variations and serving order

For a smoked-salmon variation, add 80g ready-to-eat sliced smoked salmon in total, 20g per ramekin, before the egg. Use dishes with enough spare capacity and check the cooking endpoint rather than assuming the original timing is unchanged. The caviar remains 5g per dish and is added only after cooking.

For a different caviar, replace Imperial Gold gram for gram with Oscietra Royal. Keep the total at 20g for four ramekins. If the toast finishes early, keep it separate from the dairy and caviar until the eggs are ready.

Frequently asked questions

Can I rescue an undercooked white?

Return the untopped ramekin to the water bath and continue checking. Never put a caviar-topped egg back in the oven. Choose the egg and yolk doneness appropriate for your guests.

What if the yolk is too firm?

That portion cannot be made runny again. For the next batch, use the same starting conditions and check earlier. Keep one consistent water-bath setup instead of adding cooler water midway through baking.
