Ingredients

  • 300g pear purée, thawed
  • 300ml double cream
  • 55g caster sugar
  • 4 gelatine leaves, about 8g
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1 pinch fine sea salt

Method

  1. Soak the gelatine in cold water for five minutes.
  2. Warm the cream, sugar, vanilla and salt until steaming. Remove from the heat and dissolve the squeezed gelatine in it.
  3. Cool for five minutes, then whisk in the pear purée and lemon juice.
  4. Divide between six glasses and chill for at least five hours.
  5. Serve in the glasses for a soft set.
