Black Caviar Explained: Taste, Types and Buying Choices

By Alex Beleaev | Beleaev Caviar & Gourmet, London

Updated 12 October 2026. Product specifications and catalogue prices are attributed to the linked current Beleaev pages; this guide reports no independent tasting.

Black caviar is a shopping description, not one fish species. Genuine sturgeon caviar can range from deep charcoal through brown, grey, gold and pale platinum. Start with the species and label, then use colour as one product attribute. Beleaev's Royal Baeri, Oscietra Royal and Beluga Reserve show why a single colour term cannot replace identity.

Three linked black-caviar choices

Product Published identity Catalogue appearance and texture
Royal Baeri Acipenser baerii Medium charcoal pearls, silky with a soft pop; no current numerical diameter stated
Oscietra Royal Acipenser gueldenstaedtii Polished brown to warm gold, 2.7-3.0 mm, velvety and supple
Beluga Reserve Huso huso Light grey to platinum, 3.0-3.5 mm, velvety and melting

Dark colour does not prove species or quality

The Codex sturgeon-caviar standard recognises multiple colours; black is not a species name. A nearly black tin is not automatically Baeri, and a pale tin is not automatically Beluga. Nor does darkness alone establish grade. Ask for the scientific name, the measured pearl specification and the complete traceability label.

Taste belongs to the selected product

The Baeri page uses gentle sweetness, light almond notes and clean salinity language. Oscietra is described with butter, toasted hazelnut, brioche and subtle minerals. Beluga carries marine, creamy and lightly iodine-led wording. These are attributed descriptions, not findings from an independent tasting and not promises for every tin from the species.

If choosing for the first time, decide whether the intended bite needs a firmer visible pop, a supple middle texture or a softer melting impression. Then validate that expectation against the exact product and received batch. A colour-led choice can miss the texture that matters more on a spoon, blini or potato.

A buying check that avoids colour shortcuts

  1. Confirm sturgeon species or hybrid parents.
  2. Read the CITES species, source, country, year, plant and lot sequence.
  3. Compare the product's published pearl range and texture wording.
  4. Inspect ingredients, fish allergen, storage and use-by instructions.
  5. Choose a pack size from the current selector and calculate delivered cost per planned serving.

Match the tin to the way it will be eaten

For a plain spoon tasting, texture and finish carry most of the decision. On a canapé, visibility, liquid release and how the pearls sit on the base become just as important. Weigh one finished bite before ordering for a group, and test it after the real service interval. A product that looks dark in the tin may read differently on potato, egg or a pale dairy base.

Keep the first test simple. Taste each product alone, then use the same neutral base and equal gram weight. This separates the tin from the recipe and gives a more useful answer than ranking photographs.

Retain the original packaging until service ends so any identity or allergen question can be checked against the source.

When another roe is the better description

Some non-sturgeon roes and formulated pearls are sold in dark colours. Name them by fish or formulation rather than treating appearance as permission to call them black caviar. The ingredient list resolves the category; a photograph does not.

For Beleaev's linked range, Baeri is the darkest catalogue reference, but Oscietra and Beluga remain black-caviar buying choices even when their pearls appear brown, gold, grey or platinum. Choose species and texture first, then decide whether colour suits the presentation.

Four people receiving one 5g tasting need 20g; two equal rounds need 40g. The weight plan is the same whichever colour you prefer. Multiply all promised tastes before selecting a pack, then allow for any deliberately larger serving or preparation loss. These allocations are examples, not a tested recipe yield.

Questions worth asking before payment

Ask for the exact fish identity, currently offered pack, ingredient declaration and handling instructions. If a seller claims a particular grade, farm or sustainability method, ask what evidence applies to the actual product. A photograph or a dark colour cannot supply these answers.

For a first purchase, choose a format you can use under its label, keep the serving simple and record your own texture preference. This article does not prove that the darkest tin is the best, that a higher price buys a stronger taste or that every product marketed as black caviar has the same ingredients.

Frequently asked questions

Does darker caviar mean better quality?

No. Colour is one product attribute. Compare species, the named selection, current label, condition and intended serving rather than using darkness as a quality score.

Can black caviar be gold or grey?

The shopping term can refer to sturgeon products whose catalogue colours include brown, gold, grey or platinum. It does not promise jet-black pearls.

Which Baeri pearl size is current?

The current Royal Baeri page describes medium charcoal pearls without a numerical diameter. This guide does not retain an older millimetre range as though it had been freshly verified.

Which pack should I buy for four guests?

Define all tastes first. Four 5g tastes total 20g; two rounds of four 5g tastes total 40g. Choose current available packs and check safe use of any remainder.
