A whole raw goose foie gras lobe, around 550g, expertly deveined and flash-frozen. The veining work is already done, so you can focus on the cooking. Flash-freezing locks in the structure of fresh produce, and once thawed it behaves like a fresh lobe. The flavour is buttery, gently sweet and less gamey than duck foie gras, well suited to dishes where finesse matters.
