Goat's Milk Burrata vs Vegetarian Burrata: Key Differences

By Beleaev Family | Beleaev Caviar & Gourmet

Goat's-milk burrata and the vegetarian cow-milk burrata differ in milk source and pack size. The word vegetarian describes the named cheese; it does not make a plate topped with fish roe vegetarian. Choose the milk format, portion and price that suit the guests, without treating one as a universal flavour winner.

Current cheese formats

Product Pack Catalogue price Per 100g purchased
Goat's-milk burrata 120g goat's-milk cheese with goat's cream, as listed £5.10 £4.25
Ignalat vegetarian burrata 100g mozzarella pouch with mozzarella and cream, listed pasteurised and suitable for vegetarians £2.70 £2.70

Checked on 12 October 2026. These use catalogue price and purchased pack weight; drained serving yield and checkout adjustments are separate. Read the exact cheese ingredients and label if milk source or vegetarian suitability matters. Neither dairy product should be presented as a plant-based cheese.

Portion after draining

Allow loose packing liquid to drain without squeezing out the creamy centre. Weigh the portion used, rather than assuming every received pack provides the stated weight as drained cheese. For four matched plates below, each cheese must supply 80g usable product. If one pack falls short, add more of that cheese or recalculate both sides evenly.

Keep the cheese, oil, caviar portion and service conditions consistent if comparing the two formats. A stronger or milder impression can be a guest's preference; the plate itself does not prove a general sensory ranking.

Measured serving with caviar or roe

Plate four side-by-side burrata samples using 20g goat's-milk burrata and 20g cow-milk vegetarian burrata per person. Each cheese receives 2.5g Golden Oscietra, keeping both the dairy and caviar weights equal.

  • Yield: 4 comparison plates
  • Burrata: 20g of each type per person
  • Caviar: 2.5g on each cheese sample

Ingredients and packs

Ingredient Recipe amount Pack to purchase
Golden Oscietra Special Reserve 20g 1 x 20g Sampling tin
Goat's Milk Burrata (120g) 80g drained 1 x 120g pack
Ignalat Vegetarian Burrata (100g) 80g drained 1 x 100g pack
Extra-virgin olive oil 8ml 1 bottle
Chives 4g 1 small bunch
Black pepper 4 twists From the cupboard

Weigh the actual drained cheese and the portion used; the usable remainder need not equal 40g or 20g because pack contents and draining vary. Follow each separate label rather than assigning both cheeses one storage rule.

Equipment

  • Fine sieve, two bowls and two clean knives
  • Digital scale and four chilled plates
  • Eight teaspoons and non-metal caviar spoon
  • Labels or a fixed left-right plating plan

Set an equal burrata comparison

  1. Drain separately. Open both burrata packs under their label directions and allow loose packing liquid to run off in separate sieves.
  2. Weigh eight dairy portions. Make four 20g portions from the goat's-milk burrata and four 20g portions from the cow-milk burrata.
  3. Keep a fixed order. Put the goat's-milk sample on the left of every plate and the cow-milk sample on the right.
  4. Dress equally. Add 1ml olive oil to each cheese portion and divide the pepper evenly.
  5. Allocate the caviar. Place 2.5g Golden Oscietra on each of the eight samples and finish with equal chive pieces.
  6. Serve both together. Provide a separate teaspoon for each side so the cheeses are not mixed before comparison.

Keep identity separate from preference

The product names establish that the milk formats differ; they do not prove how a person will rank either pairing. Equal drained weights and equal caviar portions make the plate suitable for an actual side-by-side choice without inventing a result.

Plating corrections

  • One cheese releases more liquid: drain it longer but do not press out the centre.
  • The portions lose their labels: keep the same left-right order on all four plates.
  • The caviar slips: make a shallow spoon hollow in each 20g cheese portion.
  • The drained amount is short: reduce neither side silently; open another pack or recalculate all plates equally.

Allergens and dietary boundary

Fish and milk are present. The cow-milk product name includes vegetarian, but the complete dish contains fish roe and is not vegetarian. Check both dairy labels and the caviar label for ingredients, cross-contact and storage. Serve the cold plate promptly and do not infer a common opened-life for the two burrata packs.

Questions before ordering

Is the bought pack the serving quantity?

No. Use the ingredient amounts in the serving plan and keep the unused product under its own label. A larger retail pack does not automatically change the number of guests or the portion on each plate.

Does an equal portion prove the best flavour?

No. Equal amounts let guests choose between the formats, but the guide does not report a blind tasting or a universal preference.

Can every opened ingredient share one storage period?

No. Read the exact product instructions and any use-by date for each ingredient. Keep ready-to-eat seafood away from raw-food equipment and serve assembled dishes promptly.

For food handling, consult Food Standards Agency chilling guidance and cooking guidance. For caviar format and quantities, see the caviar pack-size guide.
