Ingredients

  • 250g raspberry coulis, thawed and chilled
  • 500ml double cream
  • 100ml whole milk
  • 70g caster sugar
  • 4 gelatine leaves, about 8g
  • 1 tsp vanilla extract
  • 1 pinch fine sea salt

Method

  1. Soak the gelatine in cold water for five minutes.
  2. Warm cream, milk, sugar, vanilla and salt until steaming. Remove from heat and dissolve the squeezed gelatine.
  3. Divide between six glasses and chill for at least five hours until softly set.
  4. Spoon cold raspberry coulis over each panna cotta immediately before serving.
