Beluga Caviar
Beluga caviar comes from the Huso huso sturgeon, the largest member of the sturgeon family. A mature Beluga can weigh more than a tonne and reach three metres in length. Because of its size, a Beluga sturgeon takes 15 to 20 years to reach sexual maturity, and its eggs reflect that slow growth.
Pearl Size and Texture
Beluga pearls are the largest of any caviar, typically 3.0 to 3.5mm in diameter. The membrane of each egg is thin and delicate, which gives Beluga its famously soft pop. When the egg releases on the palate, the sensation is closer to butter dissolving than to the firm click of smaller caviars.
Colour
Beluga colours range from light steel grey to almost black. Paler pearls from older fish are rarer and more prized. A pale tin is a sign of provenance.
Flavour
The flavour is the longest and creamiest of any caviar. Beluga opens with a smooth butter note, develops a gentle nuttiness, and finishes clean with no sharpness. There is no fishiness in good Beluga. Everything about the flavour is long, slow, and elegant.
Price
Beluga is the most expensive caviar because Beluga sturgeon are slow-growing, relatively rare, and strictly regulated under CITES. Expect to pay several hundred pounds for 30g to 50g of premium Beluga. For a special occasion it is the benchmark. For everyday tasting it is not the right choice economically.
When to Choose Beluga
Milestone events. Engagements, major birthdays, anniversaries, corporate gifts at the highest end. Beluga is served in small quantities because the experience does not scale with volume. 30g to 50g per person for a celebratory course is generous.
Oscietra Caviar
Oscietra caviar comes from the Acipenser gueldenstaedtii sturgeon, known as the Russian sturgeon. The fish matures in 10 to 12 years, roughly half the time of a Beluga, and produces a very different pearl.
Pearl Size and Texture
Oscietra pearls sit between Beluga and Baeri at roughly 2.5 to 3.0mm. The membrane is firmer than Beluga but softer than Baeri. The pop is distinct and satisfying. You feel the egg release without the fragility of Beluga or the firmer resistance of smaller caviars.
Colour
Oscietra is defined by its golden-to-amber sheen. The best Oscietra pearls glow a rich bronze. Some tins show a hint of olive-green or deep gold. This golden character is what makes Oscietra instantly recognisable.
Flavour
Oscietra has the most distinctive flavour of the three. It opens with a pronounced nutty note, often described as hazelnut or toasted almond, and builds into a buttery creaminess through the finish. The finish is clean and long. Many chefs prefer Oscietra over Beluga because the flavour is more assertive and more memorable.
Price
Oscietra sits below Beluga and above Baeri. Expect to pay roughly 60 to 70 per cent of Beluga prices for equivalent tin sizes. The price-to-pleasure ratio is excellent, which is why Oscietra is often called the connoisseur's favourite.

Oscietra is the right caviar for any occasion where you want a premium experience without the Beluga price tag. Intimate dinners for four to eight. Restaurant service. Baeri Caviar
Baeri caviar comes from the Acipenser baerii sturgeon, native to Siberian rivers. The fish matures in 7 to 8 years, the fastest of the three, which is why Baeri is the most economical premium caviar.
Pearl Size and Texture
Baeri pearls are medium sized, around 2.2 to 2.7mm. The membrane is firm and gives a clean sharp pop. The eggs are uniform in shape and hold their integrity well under service conditions, which makes Baeri popular in restaurants.
Colour
Baeri ranges from dark anthracite grey to jet black. The colour is deeper and more consistent than either Beluga or Oscietra. Some Baeri has a faint olive undertone.
Flavour
Baeri flavour is nutty with a touch of smokiness. It is lighter than Oscietra but more pronounced than salted freshwater fish roe. The finish is clean and relatively short, which makes Baeri an excellent caviar for canapes and pairings where the other flavours on the plate deserve space.
Price
Baeri is the most accessible premium caviar. Expect to pay around 35 to 45 per cent of Beluga prices for equivalent tin sizes. This makes Baeri a practical choice for dinner parties, restaurant starters, and tasting flights.

First-time caviar buyers. Dinner parties where you want caviar for six to twelve guests. Tasting sets where you compare sturgeon species. Blini and creme fraiche canapes where the caviar is one flavour among several.
