Description

Boneless, skinless sturgeon fillet, around 1.6kg. The same fish that gives caviar, with firm, steak-like flesh that holds its shape on the grill or in a pan.

Sturgeon has long been a chef's secret: firm, dense and almost steak-like, with a clean, mildly buttery flavour — often called the steak of the sea. Each fillet is hand-trimmed boneless and skinless, around 1.6kg, from sturgeon raised in certified aquaculture facilities in the EU — never wild-caught. The texture holds beautifully on the grill, in a hot pan or under a salt crust, and stands up to assertive partners: brown butter, capers, smoked paprika, charred lemon.

Slice into steaks for the grill, grilling 3–4 minutes a side and finishing with brown butter and capers; pan-sear in olive oil then roast at 180°C for 6–8 minutes; or roast a whole portion in a salt crust with lemon and herbs.
