The Ingredients

Serves 2

  • 250g wagyu or aged beef mince (80/20)
  • 2 brioche buns
  • 60g aged Gruyère, sliced
  • 4 tbsp truffle aioli
  • 10g fresh Périgord Black Truffle for shaving
  • 2 lettuce leaves
  • 30g unsalted butter
  • 1 tbsp neutral oil
  • Sea salt and black pepper

The Method

1. Form mince into 2 patties. Don't overwork. Make a centre dimple. Season.

2. Heat oil in heavy pan over high heat. Cook patties 3 min per side for medium. Top with Gruyère in last minute to melt.

3. Halve buns. Butter cut sides. Toast under hot grill.

4. Spread truffle aioli on bottom buns. Add lettuce. Top with patty (with melted cheese). Shave 5g truffle on each. Top with bun lid. Serve immediately.
