Oysters with Caviar: A Cold Starter Guide

Serve ten freshly shucked oysters over ice, each with a small cucumber mignonette and 2g of Oscietra Royal Caviar. One 20g tin covers the platter, but raw-shellfish suitability and cold handling must be confirmed before the oysters are opened.

Ingredients for ten oysters

Ingredient Amount used Purchase quantity
Oscietra Royal Caviar 20g 1 x 20g Sampling tin
Live oysters suitable for raw service 10 12, allowing two replacements
Cucumber 40g, very finely diced 1 small cucumber
Shallot 15g, very finely diced 1 small shallot
Champagne or white wine vinegar 15ml 1 bottle
Fresh chives 4g 1 small bunch
Crushed ice Enough to hold 10 shells level As required
  • Yield: 10 oysters
  • Serves: 5 at 2 oysters each
  • Caviar: 2g per oyster

Equipment and hygiene setup

  • Oyster knife, protective glove or folded cloth
  • Stiff brush and separate clean board
  • Cold platter with a stable bed of crushed ice
  • Small bowl, teaspoon and digital scale
  • Clean caviar spoon

Shuck and dress the platter

  1. Confirm the batch. Use oysters from an approved source, within their use-by and storage instructions, and suitable for raw service. Reject damaged shells and any live shell that remains open when checked under current supplier guidance.
  2. Prepare the mignonette. Mix cucumber, shallot, vinegar and half the chives. Keep the mixture chilled.
  3. Clean the outside. Scrub shells under the method specified by the supplier, keeping exterior debris away from clean utensils and ready-to-eat ingredients.
  4. Shuck one at a time. Protect the supporting hand, keep the knife controlled and sever the muscle without tipping away the oyster liquor. Remove visible shell fragments.
  5. Seat each shell level. Put the opened oyster into the ice bed immediately. Add only a small measured spoon of mignonette.
  6. Allocate the caviar. Add 2g Oscietra to each of the ten oysters, finish with chives and serve without delay.

Raw-oyster risk cannot be removed by garnish

Raw oysters can carry microbial risk, including norovirus, and vinegar or caviar does not make an unsafe oyster safe. Follow current UK food-safety and supplier guidance, and do not serve raw shellfish to anyone who has been advised to avoid it. A cooked oyster dish needs its own cooking method; adding vinegar to this raw platter is not a cooking step.

Cold-platter troubleshooting

  • A shell leaks its liquor: deepen its ice seat and keep the cup level before adding any topping.
  • Shell grit reaches the meat: stop, remove visible fragments with a clean utensil and improve exterior cleaning for the next oyster.
  • The hinge will not open: do not force the knife towards the supporting hand; replace the oyster if safe shucking is not possible.
  • The caviar sinks into vinegar: reduce the mignonette quantity and place the 2g portion on the oyster meat.

Allergens and cold-chain boundary

Fish and molluscs are present; vinegar may contain sulphites. Check exact labels and supplier records. Maintain the required cold chain for both oysters and caviar, and follow current raw-shellfish controls. Shuck immediately before service, discard unsuitable oysters, and do not store the assembled platter under this recipe.

Who should choose a cooked alternative?

NHS fish and shellfish guidance advises avoiding raw shellfish during pregnancy and explains that raw or insufficiently cooked shellfish can contain harmful viruses and bacteria. This raw platter is unsuitable for someone advised to avoid raw shellfish. Choose an appropriately cooked dish for that guest rather than relying on the garnish.

The Food Standards Agency's oyster risk assessment documents norovirus risk from raw oysters. Approved sourcing, correct storage and careful shucking do not justify calling the plate risk-free.

Ten-oyster portion and purchase check

Ten × 2g caviar uses one 20g Oscietra tin, listed at £38 and available on 12 October 2026. Oyster prices and the other ingredients are separate purchases. Two spare oysters are replacements, not an instruction to serve unsuitable shells or to stretch 20g over twelve stated 2g toppings.

Divide the mignonette sparingly across the oysters rather than flooding each shell. Keep the opened shells level, away from meltwater contamination, and serve promptly. Retain the supplier information and check the received caviar tin's dates and chilled instructions.
