The Ingredients

Serves 4 (1 ravioli per person)

For pasta:

  • 200g 00 flour
  • 2 large eggs
  • 1 tsp olive oil
  • A pinch of salt

For filling:

  • 200g ricotta, drained
  • 30g Parmigiano Reggiano, grated
  • 4 very fresh egg yolks (whole, intact)
  • A pinch of nutmeg
  • Sea salt and white pepper

For sauce:

The Method

1. Make pasta dough. Rest 30 min.

2. Roll into thin sheets. Cut 8 large discs (12cm wide).

3. Mix ricotta with parmesan, salt, pepper, nutmeg.

4. On 4 discs, pipe ricotta into a ring leaving a centre well. Carefully drop a whole yolk into each centre. Brush edges with water. Top with another disc, press out air, seal.

5. Cook in salted boiling water 90 seconds (just enough to cook pasta, not yolk).

6. Brown butter with sage in wide pan.

7. Lift each ravioli into the butter. Plate.

8. Top with 8g caviar each. Spoon brown butter sage. Cut at table to release yolk.

Very fresh yolks essential. Older yolks break.

Don't overcook. 90 seconds max for runny yolk.

Cut at the table for theatrics.
